Jen, I haven’t tried it, but a cream cheese substitution would likely work. It still gives you that creamy consistency that the Velveeta usually gives you. Try it and let us know!

Tasted much better. Also added minced jalapeño, chopped bacon and fire roasted hatch green chilies. I made it exactly the way the recipe called for the first time and my own way the second time. I honestly liked it better w/out the velveeta. You could taste the real cheese

Brian, I know it seems weird, but trust me on this one? It helps to create the right consistency in the mac and cheese. I’ve tried it with and without Velveeta, but I think it is best with it in there.
