We all need something a little sweet at the tailgate!

And these were a hit during Awful Tailgating Karaoke! (Videos may or may not be published in the future, pending those checks clearing the bank!)

I’m going to assume that they were a hit because the sugar cookie bars are just that awesome, not because everyone was way too drunk to know better. I mean, how else do you get people up there singing?

Personally, I only sing one song and that’s the fight song. And most would consider that more yelling than actual singing. Fortunately for all of you!

Rep Your Team Colors on the Sugar Cookie Bars

Without food coloring, the icing will be a nice clean white color. But you can add food coloring to the icing to match your team’s primary color! Then add sprinkles in the secondary color!

Georgia Tech’s colors are white and gold. So I didn’t need to experiment with the proper colors for my icing. I just stuck with the white and added gold sprinkles. If you get the standard grocery store 2.7 oz plastic container of sprinkles, you’ll use the whole bottle in this recipe.

Tailgating Sugar Cookies

Sugar Cookie Bars

Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes

These are great cookies to make for a large party. Quick, easy, and yummy!

Ingredients

Sugar Cookie Bars

  • 1/2 c Butter, Melted
  • 1/2 c Sugar
  • 1/2 c Light Brown Sugar
  • 2 tsp. Vanilla Extract
  • 1 Egg, Room Temp
  • 1/2 tsp. Salt
  • 1 tsp. Baking Powder
  • 2 1/2 c Flour, Sifted
  • 1/2 c Sprinkles, Your Choice of Color

Cookie Icing

  • 1/2 c Butter, melted
  • 1/4 tsp. Salt
  • 2 tsp. Vanilla Extract
  • 1/4 c Heavy Cream
  • Food Color (optional)
  • 3 1/2 c Powdered Sugar
  • More Sprinkles

Instructions

Sugar Cookie Bars

  1. Preheat oven to 375 degrees. Grease a 9x13 pan, set aside.
  2. In a large mixing bowl, beat butter, sugar, and brown sugar together until well mixed and creamy.
  3. Add vanilla and egg; beat until all ingredients well mixed.
  4. Slowly, add baking powder, salt, flour, and sprinkles to mix.
  5. Add cookie dough mixture to greased pan.
  6. Bake for 15 minutes. Remove from oven and let cool completely.

Icing

  1. Beat butter, vanilla, and salt together.
  2. Add heavy cream.
  3. Slowly add in powdered sugar. Beat on high until icing is completely mixed, light and creamy.
  4. Spread icing over the top of sugar cookies.
  5. Top with the rest of your sprinkles.
  6. Cut iced cookie bar into smaller squares. Lasts about 1 week in sealed containers, unless the cookie monsters appear.
