Great Chocolate Dessert for RV Tailgating
Like all of the recipes you’ll find here, this recipe has been tailgate tested and approved.
It is also easy to make, which is definitely important as you are trying to load up the RV, get the dog ready and coordinate with all the other tailgaters on what food to bring and when to show up!
This recipe is great to make ahead of time – you need to give the marshmallows time to melt into the chocolate as the cake cools. The melted marshmallows and chocolate gives the cake extra ooey-gooey greatness!
You can safely store this cake in a covered dish for up to two, maybe three days, but I will really wonder about you if this cake makes it that long in your presence without you eating it.
Seriously, I’ll have to assume you are sick. You have way too much will power if this chocolate cake can survive without being completely consumed within minutes of serving it.

- 1 pkg Chocolate flavored Jello Pudding Mix
- 1 pkg Betty Crocker Super Moist Chocolate Fudge Cake Mix
- 1 1/2 c Milk
- 4 c Mini Marshmallows
- 1 c Chocolate Chips, Semi-sweet
- 2 tsp. Hot Chocolate Mix
- Preheat oven to 350 degrees. Spray 13x9 pan or baking dish with non-stick cooking spray.
- In a large bowl (Kitchen Aid mixer), mix chocolate pudding, cake mix, and milk until well blended.
- Carefully add 2 cups mini marshmallows - mix by hand or on slowest mixer setting until evenly distributed through cake batter.
- Spread batter evenly into pan. Top with chocolate chips evenly across top.
- Bake 30 to 35 minutes until a toothpick comes out almost clean.
- Add remaining marshmallows (or just the rest of the bag!) on top of cake. Let cool completely.
- Sprinkle dry hot chocolate mix just before serving.
Wilton’s Color Mist to Add Some Pizzazz!
Out on one of my random walk through Wal-Mart shopping trips (because every RVer does this on occasion), I stumbled across this Color Mist product from Wilton.
It was in the party supply section, not with the normal baking products, if you are looking for it.
Since I’m always looking for things to add a little Georgia Tech flare, the gold color obviously caught my attention and I had to try it out.
This is basically an edible spray paint to give white icing a cool color and airbrush effect. Or in this case, white mini marshmallows!
I’m sure those with more artistic talent than me can make desserts dazzle with this spray. For mere mortals like me, it gives a nice extra touch of your favorite team’s color!
Don’t worry, I finished spraying the rest of the marshmallows before serving the best ever chocolate dessert!
